Stopping in Boulder as a checkpoint to my ultimate destination in Washington. Really hoping to get on the flatirons classic routes. Wary of crowds though. Any thoughts on what time I should be going as it will be a weekday?
If it's a weekday you should be fine. At the most you will wait for one group, and then be able to get on. People are also super courteous and if you are climbing much quicker they'll likely let you pass.
Are you soloing? If so, don't worry about others. Easy to go around.

Consider climbing on the massive formation known as The Slab. It's 500 feet tall and 2000 feet wide, so you can go up, down, traverse, etc. and not see anyone else all day. I used to climb it frequently. It's so much nicer than the conga lines on the First and Third Flatiron.
The First can kinda be a shit show any time the weather is nice. No problem soloing, just be courteous and communicate what you would like to do. Many times people take new climbers up, so they can be a bit nervous when somebody passes them going solo. The N. Arete is a difficult place for someone new to be following roped up, as communication is sometimes not the best between the two parties, as the line of sight is sometimes not there and the terrain leads one to get shortroped easily, as you have to walk down in parts, while the rope is going up.
You're going to have literally anything else to yourself on a weekday.
Little bit of snow on the bottom of a lot of formations, but it's very doable to step across/avoid.
If you're into a bit more adventure and want the best rappel the the Flatirons have to offer, check out the Maiden. North Face is a really funky route, but classic in its own way (basically start at summit height and climb DOWN, traversing the north side, before U-turning and going back up to summit). Goes 5.6R with some really fun sections and amazing exposure...and first rap off the summit is about as epic as raps get. Also pretty rare to see crowds there, even on weekends. Approach from the east (south side) to avoid raptor closures.
