Don't think it can get any better than stone summit out in Atlanta. NC wise, Inner Peaks and Triangle Rock Club is a nice place to be.

Peak Experiences, in Richmond, VA. The gym itself is big, well maintained, with good route setting. I worked for a summer camp run by the gym, so had a lot of cross-over with the gym employees. It seemed like a great place to work, and the owner is a fantastic guy.

I've worked at and currently climb at Inner Peaks. Its good- but probably not THE BEST.
Guideline #1: Don't be a jerk.
