Spending a week driving through southern Utah next month. Looking for areas with sport routes in the 5.7-5.10a range. Thanks in advance.

Many options around St George, essentially nothing anywhere else.

Prophesy Wall is great and you can camp there. Nearby is Black Rocks which gives you a very sunny and a very shady option depending on which side of the canyon you climb. (These are both in St George)

If you pick up a copy of the new High on Moab guidebook, you'll find there's a sport area called the Theatre and Cinema outside of Moab with about 20 sport routes from 5.9 to 5.12.
