Hey, I did this once. I loathe fixies, but I do usually ride a single speed. For a while I was rocking the 3 speed. I laced up a sturmey archer 3 speed hub with a drum brake. Pretty cool set up. The 3 speeds are widely spaced, if you calculate what ratio you want for around town (by choosing a corresponding sized front ring) you can have a perfect around town gear, a downhill/riding fast gear, and a granny/climbing gear. Drum brake was neat because it stays dry when its wet outside, so no concerns about braking power. That being said, I'd skip the drum brake next time. It was pretty heavy and was not that powerful. Also, that rear wheel was heavy as hell. Still, a fun set up.

Pretty sure on Sheldon Brown's site there was instructions how to rig a sturmey archer 3-speed to be a fixed 3 speed....if you're into that BS.
Guideline #1: Don't be a jerk.
