I might look into lisa falls, easy single pitch sport climbs with a waterfall. there is some harder climbs, and a second like 5.4 trad pitch above some of the climbs.
Rock Canyon down in Provo is good for that range on limestone. Only limestone in LCC or BCC is up high in the canyons near the skiing. BCC has more moderate bolted lines, LCC mostly trad on slabs and cracks. Also, the moderate sport areas in BCC aren't really mellow or fun on weekends. Crowds build quick, lots of groups. Had a meetup group clown try taking my draws off an anchor once while my partner was leading a route I'd just finished.
Hellgate! Limestone, short approach and with the lack of winter we have had this place should be ready to go. Rated a touch harder than the OP was looking for but not to worry. The area is soft and the routes are WELL protected. Watch the z-clips and wear a helmet! mountainproject.com/v/east-…
Hellgate would not be an appropriate place right now. There is still a good bit of snow above and below the cliffs and the warm temps are creating increased avalanche danger.
American Fork Canyon (hard rock wall) would be a much better bet.
I can 2nd the recommendation for American Fork Canyon Hard Rock Wall. The approach is 5 minutes and Rockapella is one of the best 5.7 sport climbs in the Wasatch. All of the routes in this area have a runout first bolt, but the climbing is usually pretty easy (5.5) to the first bolt.
