Get a food dehydrator. Best thing we ever did for back country food.

As far as eliminating grains, if you want carbs, coarse shred spuds of whatever variety you like. We do Sweet potatoes and yams, steam them to just a tiny bit undercooked and dehydrate them. They are so much better than the boxed versions it is ridiculous. Also do the same with plantains that are just starting to ripen. With a dehydrator you can also prepare fully cooked meals sans fats and meat and dehydrate them, then add fat and meat when re-hydrating/cooking in the field

Also dried fruits. Again the stuff we dehydrate is lights years tastier than the store bought stuff.

Snack power balls: about equal parts of dates and your choice of nuts in a food processor, can add shredded coconut, nut butters spices etc, grind everything up really well and roll the mix into balls of whatever size you want. I throw them in a bag with oats so they don';t stick to each other, but you can use coconut flour instead. A couple versions; Date/peanut/sesame/ginger, and date/almond/coconut
